Protein Walnut Brownies

Fudgy Chocolate Walnut Protein Brownies

Prep time: 10 mins | Bake time: 18–22 mins | Yield: 9 squares

Ingredients

  • 2 scoops (~60g) Chocolate Whey Protein Powder
  • 1/2 cup (45g) unsweetened dark cocoa powder
  • 1/2 cup (60g) oat flour (or finely blended oats)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (120g) ripe mashed banana (or unsweetened applesauce)
  • 1/4 cup (64g) natural peanut butter or almond butter
  • 1/4 cup pure maple syrup or liquid sweetener of choice
  • 1/3 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup (60g) raw walnuts, coarsely chopped (divided)

Instructions

  1. Prep: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper (or spray with non-stick cooking spray).
  2. Combine Dry Ingredients: In a large bowl, whisk together the protein powder, cocoa powder, oat flour, baking powder, and salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the mashed banana, nut butter, maple syrup, and milk until smooth.
  4. Mix Batter: Fold the wet ingredients into the dry ingredients until just combined. Fold in halfof the chopped walnuts.
Note: The batter will be very thick!
  5. Pan & Top: Spread the batter evenly into your prepared baking pan using a spatula. Sprinkle the remaining chopped walnuts evenly over the top, pressing them down lightly into the batter.
  6. Bake: Bake for 18 to 22 minutes. A toothpick inserted into the center should come out with a few moist crumbs (do not overbake, or the whey will dry out!).
  7. Cool & Slice: Let cool completely in the pan for at least 20 minutes before slicing into 9 squares.
